Atho is vegan, low in calorie and makes for a great weeknight dinner.Dates back to British Raj period where Indians from Burma moved back to India during crisis and opened shops in north part of chennai. Still u can the authentic streetfood version of it in North chennai alone and no where else in almost whole India. Generally served with plantain soup and variantions like egg atho and chicken atho. And this egg noodle cold salad is served as national dish of Burma which gets different in street food version to suit Indian palates. Preparation time:20 Minutes Serves:2 Ingredients used: Noodles - 100 gms Onion - 2 Cabbage - 100 gms Garlic - 10 to 15 Red chilli flakes - as reqd Tamarind - small lemon size Food color - 1/4 tsp (optional) Peanut - 3 tbsp Bengal gram - 3 tbsp Thattai - as reqd Coriander leaves - as reqd Oil - as reqd Salt - as reqd Procedure: 1.Take 2 tbsp water in a bowl, add 2 to 3 tsp salt needed for atho. Dissolve into a solution and set aside.Make powder with peanut and bengal gram by mixer grinder. 2.Chop onion into very thin slices and separate every julienne. 3.Peel the garlic and chop into thin slices. 4.Boil water in a sauce pan, Add salt and food color. 5.Add Noodles in it.Let it cook for 10 Minutes. 6.When the noodles is ready, keep aside. 7.Heat oil in a pan.First add thinly sliced onions and fry till golden brown.Deep fry till dark brown and they resemble like chips. 8.Repeat the same process for deep fry garlic as well.Switch off stove and let the oil cool down. 9.Transfer this garlic infused oil into a bowl and set aside. 10.Take a deep mixing bowl or a wide plate. 11.Add julienned onions, shredded cabbage, tamarind extract to taste, salt. You can add lemon juice if you want. 12.Mix well using your hands by massaging the juices into the vegetables. 13.Add cooked noodles, chilli flakes, fried onions, fried garlic, roasted gram powder, infused sesame oil, coriander leaves to taste. 14.Mix well using your fingers. The veggies should mix well with the noodles and the other ingredients added. 15.Break thattai into small bite sized pieces, add it to the bowl and mix well once again. 16.Take a taste test. Add more salt-sugar solution or lemon juice and adjust according to your taste. 17.Burmese Atho is ready to be served.'
